To celebrate this special day, why not treat your loved one to luxurious Armand de Brignac Champagne paired with wonderful homemade truffles as created by Iron Chef UK, Judy Joo – the perfect recipe for romance!
1 cup (240ml) double or heavy cream
225g (8oz) milk chocolate, chopped
225g (8oz) dark chocolate, chopped
2 tbsp orange liqueur
1 tbsp pure vanilla extract
30g-40g (3-4 tbsp) cocoa powder, for rolling
Start by boiling the heavy cream in a large saucepan
Place the chopped chocolate in a bowl, pour the hot cream over the chopped chocolate. Cover with plastic wrap. Let stand about 3-4 minutes, or until the chocolate is melted. Gently stir together to make a ganache, incorporating the chocolate and the cream together evenly.
Whisk in the orange liqueur and the vanilla extract.
Cover and let cool in the fridge. Once cooled, use a melon baller to make round balls. Place the balls on a tray and into the fridge to set again. Once the balls are firm, roll gently in cocoa powder. Chill until ready to serve.
